Truffled Rice Fritters
Ingridients
| 2 cups cooked rice |
| 2 eggs |
| 2 tablespoons flour |
| 1/2 cup milk(or as needed for consistency) |
| 1 shallot |
| 1/4 cup oil |
| Salt and pepper, to taste |
| Grated Truffle , to taste |
| Truffle slivers for garnish |
Method
Heat oil in a skillet. Mix all ingredients together and drop by the spoonful into the hot oil, turning when browned on one side. For a lighter batter, separate eggs and whip whites before folding into the mixture.
