Truffle Berry Fool with Sweet Truffle Biscuits
Ingridients
FOR THE FOOL |
6 cups blackberries ( or any other berry of season) |
1/2 cup sugar |
Grated Truffle, to taste |
Generous amount of heavy cream |
FOR THE BISQUITS |
1 tablespoons baking powder |
2 cups all-purpose flour |
1-1/4 cup heavy cream |
Pinch large grain salt |
1/3 cup sugar |
1 ounce grated truffle |
Method
TRUFFLED HEAVY CREAM RECIPE
Pour heavy cream into a mixing bowl and whip until peaks form when you raise the beaters. Fold in freshly grated truffle, to taste.
Whisk together flour, baking powder and salt, and add grated truffle. With a fork, quickly stir in cream, adding a little extra as needed. Turn onto a floured surface and fold over three times, patting down to ¾-inch height. Cut into circles, brush with heavy cream, sprinkle with sugar, and bake at 425°F for 1o minutes. Cut in half and top with Truffled Whipped Cream and fresh blackberries. Place the top of the biscuit over the berries, and spoon some more cream on top. Cap with a few more fresh berries and a truffle sliver.
